Gentlemen’s Relish – Top gear

This course builds on existing classic skills to introduce more advanced knife skills and dishes for entertaining. The focus is on those things most home cooks shy away from; pastry making, soufflés and how to cook fish. Dishes include Tarte à l’oignon, Cheese soufflé, steamed plaice fillets filled with vegetable julienne, Hollandaise, whole baked, aromatic Trout and Tarte au Citron.
