Advanced Cheffing for Chalet and Yachting – 2-week course

We work exclusively with and for a small number of luxury ski and yachting companies looking to employ senior chefs. Currently awarded Best Cookery School in UK and Ireland, we have a reputation for quality training and high rate of job offers with students being cherry picked even before leaving our courses. Our two-week course currently offers the most rigorous and relevant training in the UK with almost twice as many hours in the kitchen as other courses. Cookery school parter Liz Young has a background from super yachts and has both global experience and industry contacts.

Week 1 puts into place all the relevant skills required for commercial cooking for demanding guests including the following key skills:

  • Knife skills, pastry, fish, poultry, meat, cakes, desserts and sauces
  • menus including starters, main courses, desserts and cakes for adults and children, vegetarian and other dietary options
  • level II Food & Hygiene certificate
  • table-setting and wine comprehension
Week 2 puts in place the advanced skills required for this discerning category incl
  • Molecular cooking with Gordon Ramsey trained guest chef
  • Italian master class with TV chef and author Ursula Ferrigno
  • Sushi master class with our resident Cordon Bleu trained chef Hitomi Kerr
  • Canapé master class with Liz Young
  • Food styling and presentation with Liz Young
  • Scandinavian master class with Tine Roche incl pickling and curing fish
Accommodation to be arranged by students directly. We endorse: Cityroomz (buget hotel located by railway station with single/double or triple rooms) Travelodge (located just a 5-minute walk away from the school) N.B. During University holidays accommodation is available at our neighbouring Homerton College. Rooms are bookable via us but payment must be made directly with Homerton at the time of your stay.
