All our Fish courses aim to revive your appetite for fantastic fish and to fill you with confidence to identify and buy the best fresh fish and how to cook whole, gutted and filleted. The summer fish course includes building your own smoke box for quick and delicious smoked fish – a great party trick and a healthy and quick way to cook fresh fish. Recipes include a fantastic dish for al-fresco parties: Barbecued fish with Indian spices, an elegant pan-fried sea bass with prawns and green pea mousse as well as our Lapsang suchong smoked mackerel. For light and healthy summer meals – think British fish!
